You are stating that it doesn't happen any other time except when sled pulling, and you are basically stating your electronics are set to kick azz on the street it doesn't happen until the sled is hooked up.

So I take it this doesn't happen when pulling a trailor up a steep grade. I would recommend that you check your water pump pressure and make sure the clutch fan is working correctly.
