Arduino forum has tons of this.
Also instructables has a bit.
About as cheap as you're going to get. easy, no not unless you can speak code already.

It's a huge pain in the ass if you don't know the language. Sometimes you can find a tutorial and limp along, but I'd definitely recommend learning a bit of code so that you can edit things yourself with confidence. I'd budget somewhere in the ballpark of 100hrs minimum to become marginally adequate!

Pretty Basic Stuff I think. Trans temp, Oil temp, Coolant Temp, RPM, EGT, IAT, Drive Pressure, Boost Primary, Boost secondary, Boost Combined. Fuel Pressure. Etc.

I am not sure if Joe Servo still has any of the original dataloggers, but I had around $1000 in mine, fuel pressure, intake temp, 6 egt, boost, drive, engine rpm, wheel speed. Wiring was a little clunky as it was individual wiring for every device, but it really was a slick unit.

I bought one of his back in the day, but didn't use it. I couldn't remember his name, but that would be my vote, if you wanted one that was on a budget.

You guys have suggestions on 5V sensors that are rugged enough and still affordable?

I've got a K-type thermocouple tied to an amplifier chip that I was building g for my Diablo sport trinity a few years back. I will drag it out a post a schematic.

It would be cool to write a multichannel logger sketch with a standard CSV output and then build a macro like the timing macro that was posted for the smarty/EFI guys

I went with isspro proformax gauges and logger. Logs up to 17 individual sensors and graphs them on a spreadsheet. You don't even actually have to run any gauges if you don't want to. I did because they have a recall feature on all gauges that will show you the max high or max low. Quick and handy for at the track, without having to open and view the spreadsheet.
