Dpf & cat , can I gut them?

I love in a state that does visual inspection, no smog check etc. On all my old trucks with cats I always pulled them off, gutted them and put them back on. It keeps it looking stock and gets the job done. Can I use a programmer to delete the dpf, but remove the internals and leave it in place?

Big pointed bar or sharpened rod, big hammer, and a good bit of sweat...... done deal.
H&S or EFI tune.
