I'm having some issues with my truck it's throwing a code p0073 and hesitates very bad above 2k it feels like you're trying to floor it when your running out of fuel. My air dog is on and sounds like its pumping

I'd swap in a known-good IAT and/or verify that circuit isn't pinched.
