I have the truck in my sig. and am wondering what would be the best size tire for drag racing between a 285 65R 18 which is ~32" or 285 75R 18 which is ~34", both sizes are about the same width. I have 3:73 gearing.

What kind of hp and what kind of weight? IMHO that's where you need to start. Than comp d calculator or www.richmondgear.com's calculators to estimate what you need and what tire diameter you want.
 
The 32" tire will be MUCH easier to cut a good light with then the 34" tire. I have a 31.8" tire on my 05, and run ~11.08 @ 122mph. Normal reaction time is .030's, 60 foots are 1.58-1.60. I have a set of tires that are about 34", and I struggle to cut .070 lights, and the mph ends up about the same, but the E.T.'s are slower because of a worse 60'. With the 31.8" tire I'm at about 3400rpm at the exit of the timing trap. I have 3.73's as well.

I run the 285/65R18 Toyo Open Country A/T on my 98...Aired up to about 70psi, I cut a 1.79 60' and ran a 13.98 @ 98mph. I think there is more 60' left with them with a little less pressure, and more time in the seat. I think that was about my 3rd pass on those tires, and first on that engine setup.

32" is the ideal size for 3 73 gears. You are good to about 134 MPH in 1/4 tached out @ 4000 RPM
 
i have 31.5 (285/60-18) on my truck (2wd) with 3.55's i think id prefer a little more gear, going to try some 32-33's on the rear
