How does an electric alternator work? And what is the truck being used for?

Some rules state for the 2.6 you can use a electric water pump and electric fans but still have to have all acc. hooked up except a/c compressor (ie fan hub and alt) want to free up as much hp as possible but still stay in the rules but running a fan hub and alt will drag hp down not sure how much. will 2 800 amp batteries be good enough to run a elec fuel pump, water pump, fans air locker pump, etc without having to charge it between runs? the truck is going to be a puller only with a 3.0 engine (internals) with a 2.6 charger.
Why, not get a charger to charge them up between runs. I'd just get rid of alternator.
NADM says in the rules if I read then right 2.6 has to have the alt hooked up in factory location. so I guess what I'm trying to do is get a belt that will let me run the alt, tensioner, crank pulleys along with using a elec water pump and bypassing the fan pulley without interfearing with anything.
I put something around 150 miles on my 12v after the alternator died. No lights or anything, but it ran. I just let it idle when I went in the places I had to go...

I'm curious how long it would last running a FASS, water pump, and cooling fans. Those fans draw a relatively large amount of current (generally speaking).
