Can you make a set of twins with two stock turbos? I'm not really sure about all this diesel stuff yet

Yea. Do some research before you purchase. May be easier and more cost effective to have a single.

you can buy a 2/3 kit from source automotive or source out parts from them and vulcan performance also carrys twin turbo parts.

What are you looking for? What are your current mods? Like stated earlier, a larger single may be a better idea.
