Coolant Temp Fluctuation

Got the truck out of the garage for the first time this year. During the drive, I noticed that at highway speeds, engine RPM of 2000 and above, the coolant temp stays at the 200 degF mark on the factory gauge. Pull up to a stop light, the coolant temp will decrease down to the 2 on the gauge (my guess is this is about 180 degF).

What's causing this?

I have the FPE coolant bypass installed. When I installed the bypass, I also installed a new thermostat and new coolant. All of this was completed about 4k miles ago.

I didn't notice this issue prior to putting away the truck for the Winter. This issue also did not occur prior to the coolant bypass install and thermostat and coolant swap.

Coolant level is good to go.

I have wondered if the bypass was stuck open. I will call FPE and see what their thoughts are.

I wish I would've kept the old engine thermostat. I am not 100% sure that the new part doesn't have a lower opening temp.
