I have an open differential in my 2 wheel drive truck. I don't want to go
4 wheeling , but we do go off-road camping and get almost stuck sometimes
if the dirt road is muddy. What should I have installed for better traction ?
Locker , Air Locker , Limited slip ?

A tight factory limited slip works just fine, my 98' 4x4 has a tight enough limited slip that both rear tires always spin when I'm on it, but it's still loose enough to be safe making turns on wet roads.

My front axle is open, but when offroading, 3 spinning wheels does just fine everywhere but the deepest sand and extreme angle terrain.

In your case, being 2wd, you're not going to gain tons of traction with a limited slip or a locker on flat ground. It will help a lot with uneven terrain. Adding a few hundred pounds right by the tail gate along with a nice newer all terrain tire will be the best traction upgrade.
