The lunette eye is better than a clevis, as the clevis will come down to make the same angle as the chain, and you loose hitch height. The one that has a lunette eye on it looks to be better constructed also.

Yeah go for the lunette.
Make sure to make the rest of the hitch out of solid bar 2"x2".
Get the channel as close to the bumper as possible and if possible get a gusset in there.

Yeah i made mine out of a eye with a longer adjustable C channel and a solid shank
