I ran 315/75/16 buckshot mudders on my stock steel wheels with just a leveling kit and zero rub. The only time I could hear or feel contact was off road in the gumbo mud at full lock when the corner of the tire would pick up enough mud to contact the built up flung mud on the plastic wheel well liners.
Tyler, my truck turns like a freak as well. I get pissed off every time I drive the wife's 2wd montero sport that seems to have identical to slightly worse turning radius.
All that said. A year ago I replaced my track bar with a life time warranty Autozone piece. When I did the install, I had to jack the truck up higher to fit the new non-stock track bar that was a good half inch longer. After that, my left front would rub at full lock on the control arm just like yours. The new track bar messed up my steering as well and my wheel was turned about 90* when driving straight. After adjusting so the wheel was straight and toeing in the front a little more, the rub was almost entirely gone.
I have since downsized to 285's in my quest for more acceleration and better tire life and fuel economy. My 285 AT's do not rub at all, but I'm not sure if they would be fine without the leveling kit.
For what it's worth, Autozone has been great on their warranty but changing the trackbar every 15K gets old. It only takes me 15 minutes now and I don't have to use a jack or helper anymore, but it still sucks!
